Lorsque Guillaume III d&rsquo;Orange-Nassau s\u2019empara du tr\u00f4ne d\u2019Angleterre en 1689, il rapporta le geni\u00e8vre depuis son pays natal. Il affranchit la production de liqueur de gen\u00e9vrier de tout imp\u00f4t et par la m\u00eame occasion, \u00e9tablit de lourdes taxes pour l\u2019importation d\u2019alcools fran\u00e7ais. Les soldats britanniques, alli\u00e9s des Hollandais dans la guerre opposant les Pays-Bas \u00e0 l\u2019Espagne, apport\u00e8rent \u00e9galement cette liqueur sur l\u2019\u00eele britannique, o\u00f9 elle fut baptis\u00e9e du nom de Gin. En 1690, un arr\u00eat\u00e9 fut adopt\u00e9 stipulant que le gin ne pouvait \u00eatre produit qu\u2019\u00e0 partir de c\u00e9r\u00e9ales anglaises.<\/p>\n<p>En 1769, Gordon Co. d\u00e9buta au nord de Londres la production d\u2019un gin distill\u00e9 trois fois, tr\u00e8s r\u00e9pandu au sein de la marine britannique. \u00c0 cette \u00e9poque, de nombreuses vari\u00e9t\u00e9s \u00e2pres et dures \u00e9taient distill\u00e9es \u00e0 divers taux d\u2019alcool sous l\u2019appellation de gin. Avec l\u2019expansion des cultures c\u00e9r\u00e9ali\u00e8res dans les vastes zones agricoles am\u00e9ricaines, le prix des c\u00e9r\u00e9ales chuta et la production d\u2019alcool devint \u00e9galement moins co\u00fbteuse. Le gin bon march\u00e9 et \u00e0 fort pourcentage devint tr\u00e8s appr\u00e9ci\u00e9 par les classes sociales inf\u00e9rieures, car il provoquait un \u00e9tat d\u2019ivresse apr\u00e8s seulement quelques verres. La consommation de gin augmenta si fortement que le gouvernement se vit oblig\u00e9 de s\u2019interposer dans cette crise du gin. Le prix du gin fut augment\u00e9 artificiellement pour les classes inf\u00e9rieures par de lourdes taxes et des contr\u00f4les de qualit\u00e9 renforc\u00e9s.<\/p>\n<p>En 1791, l\u2019entr\u00e9e en vigueur du Gin Act permit de r\u00e9guler la qualit\u00e9 et la production du gin, mais \u00e9galement de l\u2019introduire dans le cercle privil\u00e9gi\u00e9 de la classe sup\u00e9rieure. Cette \u00e8re du gin fut marqu\u00e9e par l\u2019am\u00e9lioration des recettes et des m\u00e9thodes de distillation dans le respect de la nouvelle r\u00e9glementation par les nombreuses distilleries du quartier londonien de Bloomsbury et de la banlieue de Finsbury. C\u2019est justement \u00e0 Finsbury, au b\u00e9n\u00e9fice d\u2019une eau de source claire, que fut d\u00e9velopp\u00e9 le London Dry Gin, non pas en tant qu\u2019appellation d\u2019origine (c.-\u00e0-d. Gin de Londres), mais bien plus en tant qu\u2019une quadruple distillation particuli\u00e8re, r\u00e9alis\u00e9e dans des alambics de cuivre, avec laquelle sont obtenus des spiritueux au go\u00fbt particuli\u00e8rement plus rond et sec compar\u00e9 au geni\u00e8vre continental.<\/p>\n<p>Le pr\u00e9curseur est le bien nomm\u00e9 Old Tom Gin, un gin l\u00e9g\u00e8rement sucr\u00e9, tr\u00e8s populaire aux 18e et 19e si\u00e8cles. Il se pr\u00eate surtout (mais pas seulement) \u00e0 \u00eatre m\u00e9lang\u00e9 aux long drinks tels que Tom Collins et peut \u00eatre consid\u00e9r\u00e9 comme un interm\u00e9diaire entre le geni\u00e8vre et le London Dry.<\/p>\n<p>Le gin a \u00e9t\u00e9 interdit en Angleterre de 1840 \u00e0 1880.<\/p>\n<h2>Subdivisions du gin<\/h2>\n<p>Le r\u00e8glement (CE) n\u00b0 110\/2008 distingue le gin du gin distill\u00e9. Le London Gin en est une variante, pour laquelle la mention dry (sec) est autoris\u00e9e, sans \u00eatre toutefois consid\u00e9r\u00e9 comme un type sp\u00e9cifique de spiritueux.<\/p>\n<p>En segmentant l\u2019appellation Gin, on peut diff\u00e9rencier les cat\u00e9gories suivantes\u00a0: Dry Gin ou London Dry Gin, Old Tom Style, Plymouth et Modern Gin.<\/p>\n<h3>Dry Gin<\/h3>\n<p>Les Dry Gins ne sont pas sucr\u00e9s et poss\u00e8dent donc un go\u00fbt sec, \u00e2pre et fort, voire \u00e9pic\u00e9. La baie de geni\u00e8vre domine la saveur. Les diverses plantes peuvent \u00eatre ajout\u00e9es \u00e0 tout moment, pas uniquement avant la distillation ni en une fois. De m\u00eame, diff\u00e9rents colorants et ar\u00f4mes de synth\u00e8se (nature-identiques) peuvent \u00eatre ajout\u00e9s.<\/p>\n<h3>London Dry Gin<\/h3>\n<p>Les Dry Gins et les gins distill\u00e9s ressemblent de pr\u00e8s au London Dry Gin, avec une r\u00e9glementation toutefois plus stricte pour le London Gin. Aucune substance ne peut \u00eatre ajout\u00e9e au London Dry Gin apr\u00e8s la distillation et diff\u00e9rents lots de distillation ne peuvent \u00eatre m\u00e9lang\u00e9s. Le Dry Gin et le London Dry Gin ont en commun une distillation au moins double et l\u2019interdiction de tout ajout de sucre.<\/p>\n<h3>Old Tom Gin<\/h3>\n<p>Le Old Tom Style est sucr\u00e9 et ainsi un Sweet Gin, ce qui signifie que du sucre est ajout\u00e9 apr\u00e8s obtention du distillat, un moyen utilis\u00e9 autrefois pour couvrir sa qualit\u00e9 souvent m\u00e9diocre. La baie de geni\u00e8vre domine ici aussi la saveur. Son nom vient du chat noir (Old Tom Cat), dont la t\u00eate stylis\u00e9e \u00e9tait pr\u00e9sente sur la fa\u00e7ade des pubs aux 17e et 18e si\u00e8cles. La client\u00e8le ainsi attir\u00e9e jetait une pi\u00e8ce de monnaie dans un orifice du mur et pouvait d\u00e9guster la boisson populaire du moment, directement vers\u00e9e dans la bouche. Aux 18e et 19e si\u00e8cles, le Old Tom servait de base \u00e0 de nombreux cocktails classiques. Il est \u00e0 nouveau produit de nos jours, apr\u00e8s \u00eatre tomb\u00e9 en disgr\u00e2ce pendant longtemps.<\/p>\n<h3>Plymouth Gin<\/h3>\n<p>Le Plymouth Gin est le gin de la Royal Navy et le seul gin au monde \u00e0 jouir d\u2019une appellation d\u2019origine prot\u00e9g\u00e9e. Le Plymouth Gin doit donc obligatoirement venir de Plymouth, au sud de l\u2019Angleterre. Il est \u00e9galement sucr\u00e9, mais poss\u00e8de un go\u00fbt plut\u00f4t lisse, donc plus doux que les (London) Dry Gins. La baie de geni\u00e8vre s\u2019impose moins lors de sa fabrication, bien qu\u2019elle reste dominante. Par ailleurs, aucune plante am\u00e8re n\u2019est utilis\u00e9e.<\/p>\n<h3>New Western Style Gin ou gin moderne<\/h3>\n<p>Les gins modernes comprennent tous les gins qui n\u2019entrent pas dans les quatre autres cat\u00e9gories de gins. Plus pr\u00e9cis\u00e9ment, il s\u2019agit de types de gins qui ont un autre style, avec une utilisation et un m\u00e9lange diff\u00e9rents de 120 plantes. La baie de geni\u00e8vre n\u2019est plus n\u00e9cessairement dominante et les ar\u00f4mes sont souvent plus \u00e9quilibr\u00e9s ou un autre ar\u00f4me est utilis\u00e9 de pr\u00e9f\u00e9rence. Les gins modernes contiennent en partie moins d\u2019alcool.<\/p>\n<h2>Fabrication<\/h2>\n<p>Le principe de base de tout gin est un tr\u00e8s bon alcool neutre et une association de diff\u00e9rentes plantes. On utilise aussi bien l\u2019alambic \u00e0 repasse (pot still) que l\u2019alambic \u00e0 colonne (patent still).<\/p>\n<p>L\u2019alcool neutre (qui deviendra le gin) prend l\u2019ar\u00f4me des plantes gr\u00e2ce \u00e0 trois m\u00e9thodes diff\u00e9rentes\u00a0:<\/p>\n<p><strong>Cold Compounding :\u00a0<\/strong>Les essences de plantes sont extraites et m\u00e9lang\u00e9es \u00e0 froid avec l\u2019alcool.<\/p>\n<p><strong>Distilled :\u00a0<\/strong>Les plantes sont broy\u00e9es, ajout\u00e9es \u00e0 l\u2019alcool neutre, puis distill\u00e9es.<\/p>\n<p><strong>Racking (Infusion \u00e0 la vapeur) :\u00a0<\/strong>Les plantes sont plac\u00e9es dans des corbeilles, suspendues dans l\u2019alambic et la vapeur montante de la distillation absorbe les ar\u00f4mes de plantes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chronique historique autour du gin Les plus anciennes sources du milieu du 17e si\u00e8cle parlent d\u2019une liqueur de gen\u00e9vrier, nomm\u00e9e geni\u00e8vre (Genever) par le m\u00e9decin Fran\u00e7ois de la Bo\u00eb.
