Everleaf was founded in the United Kingdom in 2019 by Paul Mathew, a conservation biologist and bartender who could not find any alcohol-free drinks whose flavour convinced him. His aperitifs are made from distillates and extracts of sustainably sourced botanicals and sweetened with Fairtrade cane sugar; alongside flavour, the focus is on a texture on the palate that is unusual for the category. The company is a certified B Corp.
The range comprises three expressions, each with its own profile. «Forest» is bittersweet and is built on saffron, vanilla, vetiver, gentian root and orris, among others. «Marine» is fresh, with a salty citrus character, featuring bergamot, sea buckthorn, juniper and dulse seaweed among its 16 botanicals. «Mountain» is fruity and aromatic, with cherry blossom, rosehip and strawberry. All three are lengthened with tonic or soda or used as a base for cocktails.
