Together with his team, Master Distiller Billy Walker has embarked on a “Meikle Tòir”, which means a “big project”. Their aim is to produce and perfect an unrivalled peated single malt.
Every step has been carefully considered and masterfully optimised: the use of first-class continental peat for a sweet oak-smoked style, a long fermentation process, sophisticated distillation and expert maturation bring the spirit to its peak. After years of slumber, the contents of each barrel must meet the strict requirements of Billy and his team before they can be bottled.
