Martha and Daniel Gantenbein have been making their own wine in Fläsch in the Bündner Herrschaft since 1982. The estate covers around six hectares at roughly 500 metres on slate and limestone soils and is limited to three wines: Pinot Noir, Chardonnay and Riesling.
In the cellar they work with gravity, partly fermenting whole bunches in open wooden vats and ageing the wines for 12 to 15 months in Burgundy barrels; the wines are generally neither fined nor filtered. In 2006 the architects Bearth & Deplazes extended the building with a two-storey pressing and tasting room featuring a brick façade.
The Vieux Marc is distilled from the pomace of the estate’s own harvest, released by vintage and, after long maturation, bottled at 41% ABV.
