2015 Scottish Virgin Oak & Oloroso Sherry Cask Matured

Colour: Polished mahogany.
Nose: Mocha, grilled honeycomb and sun-dried red berries, with cinnamon butter, toasted lemon peel and muscovado sugar.
Palate: Heather honey, citrus fruits and warm baking spices, followed by ginger biscuits and poached orchard fruits, with mocha and vanilla buttercream on the finish.
European Virgin Oak Barrel

Colour: Polished gold.
Nose: Heather honey, cocoa and cinnamon, followed by hazelnuts, rose petals and mocha, with spiced orange, ginger and white chocolate.
Palate: Butterscotch, mocha and heather honey, followed by hazelnuts, spiced orange and cocoa, with ginger and muscovado sugar.

Scottish Virgin Oak Barrel

Colour: Polished mahogany.
Nose: Heather honey, raspberries in brandy and mocha, with hints of plum jam, butterscotch and citrus fruits, followed by rose petals and crystallised baking spices.
Palate: Crystallised ginger, citrus fruits and honeycomb, followed by toffee, eucalyptus and mocha, with cherries, butterscotch and roasted brown sugar.
In an era of mergers and consolidation, Billy Walker (former master distiller at BenRiach, GlenDronach and Glenglassaugh distilleries) and his team bucked the trend and led GlenAllachie back to independence.
